.....with my new mixer.
I guess math and mixers go hand in hand for some reason. At least in Kim's mind. After he passed his math compass test he stopped on his way home and bought me this super-duper new mixer. Oh, what I've been missing! This thing is a dream. My old mixer would cream butter and sugar, no problem. But then add flour with any expectations? No, that needed to be worked in by hand. A lot of work.
I've had my old Sunbeam mixer for...oh, shall we say 20 years? At least. And it's been a work horse. I've replaced the beaters a few times, but that's all. If my new mixer lasts half as long I'll be thrilled. But this new mixer is the Hummer of mixers. I whipped up two batches of sugar cookies in record time this week. Record time. And no sore arms. Oh, the luxury. Today it kneaded dough for a loaf of bread. In about 5 minutes. (My bread machine died and I've been kneading my dough by hand.)
Kim had watched me earlier this week as I made Chocolate Spritz cookies; stabbing away at the dough, trying to work in the flour. He noticed this mixer had gone on sale; more than half off and he said he couldn't resist. Maybe he sees this as his guarantee of more of his favorite sugar cookies. And it probably is. I don't really care what his motive was, I just want to stay in the kitchen and pet my new favorite toy.
Having fun decorating the sugar cookies.
